The Team

Bro’s Seafood is a collaboration project with Todd, former owner of Brother’s Seafood along with Chef  Tom D’Ambrosio and director of operations Kyle Hollenbeck. Kyle and Tom started with 1 food truck with Aioli Gourmet Burgers and eventually grew to own 10 mobile food units, a full-service catering company, 5 food truck concepts, 3 restaurants and 2 shared kitchens here in the valley. Todd came to Kyle and Tom to form this amazing team in order to bring this idea to life! They swore to never own another food truck again as 10 seemed like enough, but the passion Todd had got the veterans excited again and they can’t wait to take this to the next level. We can’t do this alone and our amazing team of sales reps, marketing specialists, admins and operations are the true secret sauce to our success.


Tommy D’Ambrosio

Co-Owner/Executive Chef

Chef Tommy D’Ambrosio is a graduate of the Culinary Institute of America and has over a decade of fine dining experience. He was also crowned Chopped Champion on The Food Network in January of 2019 on the episode Tacos & Tequila! Being born and raised in Arizona, Chef Tommy was happy to come back to his hometown and start, own, and operate one of the fastest-growing food truck experiences in Arizona. Chef Tommy has also lead Aioli & Modern Tortilla brands' into the winners’ circle of state & national competitions such as Arizona’s Burger Battle, Phoenix Devoured, Scottsdale Culinary Classic Events, and much more! It only made sense for him to collaborate on the culinary end of Bro's Seafood as seafood is something Chef Tom is extremely passionate about. Chef Tom is excited to take this project to the next Culinary level.

Kyle Hollenbeck


Kyle is a founding member and Director of Operations for Aioli Gourmet Burgers, Oakwood Fire Pizza, Modern Tortilla, Super Mac Bros, Protein and Poke, and AZ Lemonade Stand. Kyle has always had a passion for Seafood and Lobster Rolls! He will always make sure any food truck or catering booking runs smoothly. Kyle wants to always make sure you have the best experience when eating off our truck and/or having us cater your special event.

Vivianna D’Ambrosio

Director of Event Sales and Restaurants

Vivianna D’Ambrosio was born and raised in a large Italian family in Westchester, New York. She started cooking with her grand mother in the kitchen at a very young age which sparked her passion for food and cooking. After graduating from The Culinary Institute of America she worked at The Greenbrier, Americas Resort in White Sulphur Springs, West Virginia under some of the most talented chefs but she soon realized that she had a deeper passion for front of house operations. She moved to Arizona with her husband Tom D’Ambrosio and continued to work at resorts in the valley which eventually led her into event planning and sales. She is excited and eager to create your next food truck event!

Paola Valenza

Administrative Assistant

Paola is the Administrative Assistant for Aioli Gourmet Burgers. Her position encompasses everything from human resources to customer service. She personally makes sure that each client’s expectations have been met with each event. She is a native New Yorker who has recently moved to Arizona to live near her daughter and son-in-law.

Kris Levitan

Sous Chef

Kris always wanted to work with food, his dad taught me cooking basics as a young kid, and as soon as he could work he started getting into kitchens for Culinary arts experience. He went through SCC's Culinary program after high-school. His latest positions before joining our team was as a Pastry Chef for Palate New Orleans, a fine dining wedding caterer local to NOLA, and M Culinary as an in-home event chef around Phoenix. We are super happy to have Kris on board, his dishes have soul and his passion can be found in all of the dishes that he makes!

Brandon Johnson

Sales & Marketing Manager

Brandon Johnson grew up in the metro Phoenix area and has a deep passion and appreciation for the Valley of the Sun. Before coming to Aioli Burger, he spent much of his career in digital marketing and sales. From content creation, New York trade shows, to creating storyboards. Branding, graphic art, and collaborating with local businesses has come hand in hand with his education in Media arts and his accomplished marketing and business development background. Outside of work you can find him hiking every mountain, peak or canyon in this great state.

Matt Calamia

Sales and Lead Generation Manager

Matt Calamia is a Phoenix native, raised in a large Italian family and graduated from Arizona State University with a Bachelor's degree. Matt's passion is in education but he is taking a break from that to join the Aioli Team. He enjoys working out, hanging out with the family and is a former college athlete. He is also a huge fan of the Cubs and Packers. Matt is super excited to plan your next food truck event!

Sean Martin

District Manager

Sean Martin was born in Connecticut and then decided to move to the Valley in 2010! Sean lives here with his beautiful wife, son, and sweet lab/pit mix pup! He has been in the food and beverage industry for 18 years and always loves the rush that the industry brings, which is why he always finds his way back in the industry. When he isn’t working in the kitchen, Sean loves to work on his golf game, grilling while enjoying a Hazy IPA, or watching James Bond.

Jayson King

Sales Manager

Jayson is a Sales Manager at Aioli Burger and our family of brands. Prior to joining the sales team, his family was invested in multiple restaurants throughout the Valley. Through that time, he's built many relationships growing a better understanding of the industry. Always ready to lend a helping hand, and make your event a success!

Sonoma Sanders

Digital Marketing Specialist

Sonoma is a California native who moved to Phoenix in 2021. She graduated with a degree in photography and has always had a passion for creating visual content. The food industry is always so exciting and never boring which is what she enjoys. Her photography background is going to bring a fresh new take to the social media pages. Outside of work she enjoys being around friends and trying unique sour beers!

Patricia Armenta

Administrator of Events & Ambassador of Fun

Patricia is a mom of 5 and has loved every minute of it!! Though at times she would not mind renting out a child (or a pet) for an afternoon…. This has probably been the foundation that has formed a lot of her personality in her work life. She is also an Arizona native! Patricia’s motto is, “No matter the situation, there is always a solution….always have a Plan B….or C….or D….” You can find Patricia assisting our clients and our team members on a daily basis to ensure total success. She is here to share the Aioli Family love and looks forward to making your next event memorable!
